Recipe: Weird Impromptu Vegan Salad
You know when you’re craving something super fresh, kind of light, and really nutritious? Yeah, it’s for after those days of eating more on the heavy side - or, in my case, a day of desserts…and then desiring a dinner that feels more balanced & satisfying all-round.
Working with the bits & bobs in my kitchen, and letting my inspiration for “weird” ingredient combos run wild…I came up with a stellar recipe that had my boyfriend & I surprisingly going back for seconds…and thirds.
THE WEIRD AF VEGAN SALAD OF YOUR DREAMS:
Here’s the mix of goodness to prepare:
Fresh spinach (or mixed leafy greens)
Steamed peas (or boiled, and drained)
Chopped onions cooked in coconut oil (10-15 mins over medium heat in a stovetop pan)
Diced avocado pieces
Sliced apples + oranges
Dressing: olive oil & apple cider vinegar
Toss everything in a large bowl and serve with some sliced bread or have on it’s own! The peas give it enough protein to make it a hearty and well-satisfying meal - even though it’s 100% vegan + gluten-free.
